PS4 mods can be limited compared to other platforms, but that isn't a bad thing, so long as you don't want your player to look like anime trash and a big boobed prostitute with very un-lore-friendly hair. The good thing about starting as a bandit is that all the bandits in the game are friendly toward you and won't attack, and starting as a witch means that the Forsworn won't attack you (or skeevers) because they revere witches. The same author also has mods that gives you an "Alternate Start" which lets you start as a Bard, Noble, Bandit, Witch, Mage, Thief, Vampire Hunter among more, without having to go through Helgen.
I also recommend taking a look at Lgbishi's mods as they are brilliant, one of my favourite authors, they've got mods such as "Marry Almost Anyone" which basically does what it says on the tin. "Dense Grass" is an essential for me, along with "Skyrim is Windy" which can impact performance at times, it does for me anyway, it basically makes the trees and grass blow in the breeze. There's one called "Dialogue Fixes" which (I think) adds dialogue that was cut to characters in the game.
